The tradition of keeping a bowl of mixed in-shell nuts on the coffee table from Thanksgiving through New Year's has faded for most households, but the people who still keep it alive (and the people still searching "almonds in shell" every month) know something the convenience market forgot. In-shell almonds stay fresher for months longer than shelled ones. They're cheaper per pound on the commodity market. And cracking them with a nutcracker is genuinely enjoyable in a way that opening a bag of pre-shelled kernels isn't.
